The South Korean government designated November 22th as Kimchi Day to celebrate and promote the salted and fermented vegetable that is known for its various health benefits and is made in most Korean homes around this time of the year.

     In fact, Kimchi Day is not only celebrated in Korea but also in USA as well. California, Virginia, New York as well as Washington D.C. have designated November 22th as Kimchi Day.

     Napa cabbages marinated with red peppers is only one type of kimchi. In fact, there are more than 200 types of kimchi in Korea, according to experts. Ingredients, for one, make a difference and so do regions where the type of kimchi is made. As a staple food in Korean cuisine, it is eaten as a side dish with almost every Korean meal. South Korea consumes 1.85 million metric tons of kimchi annually, or 36.1 kg per person.


     To commemorate Kimchi Day, many institutions have prepared kimchi making activities for locals and for foreigners. The University of Seoul (UOS) also organized a kimchi making event for its Korean speaking foreigners. Students went to Hansik Space E:eum to prepare some kimchi for the upcoming winter.
